Salmon Portobello

I’ve not cooked in a long time and have been hoping to go back into the kitchen. So today, i finally manage to make something. I woke up telling my wife that i’ll make Salmon with Portobello mushrooms for dinner.

After Cleo’s afternoon class, we headed to the super market and bought the necessary ingredients. Pearl asked me what i needed to buy and as a very experienced cook that i am, on my mind i only knew i needed to buy some Salmon and Portobello mushrooms. :) Clearly from here on, you know exactly how excellently professional i am in the kitchen.

With much direct hints from my beloved wife, i managed to get alot more that just the key ingredients as i clearly did not do an inventory check of what we already have at home. All is well, we paid, we were on our way home to prove what a good cook i am.

I did see on TV how difficult it is to fry fish especially to still have the skin intact while ensuring it does not stick to the pan. Now this is the only thing that was still in theory in my head. By right if its deep fried enough, it should not stick to the pan right? Also i remembered going to a Sushi joint where they ran out of Salmon Skin which apparently was a key ingredient in a high end sushi, so i clearly did not want my salmon skin to be destroyed.

Kids version

Washed some asparagus and let them soak for a bit. Chopped lots of garlic and started frying them on hot olive oil. Ahhhh…. the BEST smell in the world, better than any perfume. Sprinkled some chopped garlic on the Portobellos and popped it into the oven to bake for the number of minutes my wife said which i clearly cannot remember right now.

Pearl washed the rice and set it for cooking. The cool thing is she use a normal pot and not a rice cooker.

Boiled the asparagus with some salt, then when it was done, Pearl poured away the hot water and put ice on it. I went like HUH?? Apparently according to her it brings out the rich green colour. ITS TRUE! Its called “Shocking” the vegetable to “Seal” the colours see Blanching and Shocking Vegetables. OMG! my wife is such a pro.

Its time for the main ingredient. I reused the oil that i used to fry the garlic as i think the oil should have turned into an amazing garlic aroma-ed magic oil. The salmon was towel dried, then slowly laid down with the skin side down. The concept in my head was to make the skin deep fried so that it does not stick to the pan and YES! it worked! When it was fried enough, slowly i lifted the fish like a price tag loosely stuck on a plastic wrapper. Slowly but surely the skin peeled off the pan onto nickpan’s hand, i think i’m the man, the pan man. fLiPpEd it and wahlah, its now on its way to cook the other side.

Plates are now out and asparagus laid out neatly. The portobellos takes its place rested on top of the shrooms and more garlic are sprinkled everywhere.

By this time, the rice was done and butter was added together with raisins which later was all mixed together.

When the salmons were done, they were slowly lifted out and laid across the greens. It looks great. Sprinkle even more garlic.

Its time to serve. Its time to take pictures like a good Singaporean.

The kids had theirs, we had ours.

Pearl also opened a bottle of wonderful Mascato. Yum… Cheers!

Happy National Day 2009

Cleo at National Day Observancy performanceIts 8 Aug 2009 and Cleo joined her class in performing a dance number at a nearby tented basketball court. She was all dressed up in red and white just like her classmates, but i think the dress mommy picked out long time ago is just amazingly beautiful.

We sang Singapore songs like stand up for singapore, home, etc and we even said the pledge. Its all so nice. I feel so at home some what. Its a pity we did not manage to get tickets for the parade if not the kids would have simply loved it. Actually Pearl and I would also have loved it. Oh well, at least we still felt the National Day spirit.

This year is so different from any other year as our country have used New Media heavily to get citizens into the spirit. The NDPeeps website was the main platform for all New Media engagement and there were lots and lots of channels being used. There was the Facebook Page, Flickr, Youtube and not to forget Twitter and more.

The best part was when the parade was shown on TV, NDP became the trending topic on twitter. Everyone had different views of the NDP, some loved the outfits, some bashed it, some were surprised with the pole dancing, some did not get the whole buaya chasing west side bimbo and east side nonya. lol… its funny to see and read about Singaporean’s thoughts. This is something you can’t get at the parade.

I wonder what NDP10 is going to be like. I think its going to be a milestone NDP next year. Lets hope we get tickets and on top of that still be able to engage citizens digitally.

Clié & Cleo First Skate Park Session

We went to the ECP Skatepark to skate for the first time. The kids love the skate park so much that they simply did not want to leave.

Both fell at some point, but Clié suffered the most bruises, 4 to 5 across her knees and legs, daddy was a close second with a huge bruise just under the left kneecap. Cleo suffered nothing as she wall in full protective gear.

Its been too long since I last skated. Tried to royale on the first curb I saw not knowing its heavily waxed already + the hot sun made it really really wipe-out-ish sleek. Ouch. Ok, go slow… I’m glad i at least got back my proper royale, backside royale and soul grind. The next time i’ve got to get back my soyale, pornstar, unity, backslide, christgrind, topside whatever…

Can’t wait to go back to the skatepark again.

ECP Skate Park

A real concrete skate park is finally added to Singapore’s landscape. Its just by the beach at east coast, opposite Bayshore condo area.

I remember back in 97 when everyone was skating, the desire for such a skate park was so deep that paper petitions were signed by kids not knowing what to do, who to talk to when all we had was the love of skating. We skated in the CBD, waxing curbs and everyone was into long low stylish royales. We even made a grind box at home, explored all grindable places in our area, but we did most of our skating at the playground near Blk 14 at Marine Terrace. Now, 12 years later, here I stand on a real skate park.

Amazingly i still met some of my old skate friends today when i visited the ECP Skate Park for the first time today. Aaron, Derrick & Louis were there, they were there skating like they were when i last saw them. They are no longer kids like we all were back in the days. Now its not longer a fad, its clear that skating was not merely a hobby for them, its clear that skating has always been part of them.

I was there with my Pearl, Clié and Cleo as we had a few hours to spare in that area. Did not plan to skate, hence no skates, but its good that i had the camera with me, so manage to take a number of pictures.

The bowl is so so deep. There is even a rope ladder nearby just in case people get stuck in there. The kids were quite afraid about the bowl as it is super deep for them.

Just looking at the park, the curbs, the rails, the ramps, the lush green grass, the shaded rest areas, the calm beach just beside, its beautiful, its wonderful, i’ve got to come skate asap.

No more talk… time to skate. time to roll! Now who wants to come along?

Cleo having a drink at BlissWhat a wonderful Saturday it was.

Got up at 7:15am and went jogging. Came back, read the papers, had a shower then went straight back to bed. lol…

Kids came back from Chinese class and we got ready for lunch at home.

Brought Cleo to afternoon phonics class, then headed to Starbucks, to have my latte and got some work done. Wife brought Clié to Popular to get some stationary and books, hence i had peace and full concentration.

After picking Cleo up from her class, we headed to Ikea and got hotdogs for the kids as a snack while waiting for their turn to go into the play area. Had tea and chicken wings with wife, we chatted. Got the kids out from the play area and we only bought a $2.90 clock.

We then headed to Punggol Park and had dinner at Bliss.

Wife, kids, food, beer…

Reached home, showered and slept at 9:30pm.

What a day. What a Saturday.
